- 1 kg basmati rice or other aromatic rice
- 1.8 to 2 kg of meat
- 1 tablespoon garam gura masala

- Bay leaves as needed

There are basically two main steps in cooking biryani one is cooking the meat and the other is cooking the rice. First you have to cook the meat for biryani and then cook the rice to complete the next step of biryani cooking.
So to cook a delicious biryani we will first cook the biryani meat. Then see below how to cook meat for biryani cooking.
Cooking biryani meat
Below is the step by step process of cooking biryani meat. Biryani cooking ingredients will be used as main ingredients for cooking meat. However, for your convenience, the ingredients for cooking meat are presented in a table for once.

Step 01
First take 350 grams of oil in a pan or pan. After that fry 1.5 cups of chopped onions in hot oil.
Step 2
If the onion turns brown, add 1.5 teaspoons of turmeric powder, 1.5 teaspoons of ginger paste and 1 tablespoon of garlic paste, 1 tablespoon of biryani masala, 1 tablespoon of chili powder, salt as needed, 2 tablespoons of sour curd, Make a paste with bay leaf, jaiphal, in that hot oil.
Note: Be careful with teaspoons and table spoons here. Otherwise you will be in trouble.
Step 3
After that add the meat and cover with a lid. Remember not to use any water. Wash the meat beforehand and the water that comes out of it will cook the meat nicely.
Step 4
Keep an eye on the meat from time to time to make sure it doesn't stick to the bottom of the pan. Remove the meat when it is fairly cooked without being too hard.
Note: Cook the meat for a maximum of 30 to 35 minutes for biryani. It is better not to cook it for longer. And try to keep a little broth in the meat.

Biryani Recipe
In the main phase of biryani cooking, first you need to wash and prepare the rice. Remember it is very important to absorb the water from the rice. Then keep the necessary materials as shown in the table ready at hand. So, let's move on to the basics of cooking
Step 01
First heat the oil in a pot (pot or cooking pan). After that keep frying a little more than 1 tablespoon of chopped onion. To this, add 4-5 cardamoms, 1 tsp cumin, dal-sugar and tespata and fry for 4 minutes maximum.
Note: Avoid over frying other ingredients including onions while cooking Biryani.
Step 02
After frying other ingredients including onion for 3-4 minutes, add 1 kg water soaked basmati or fragrant polao rice. Fry the rice with onion and other ingredients for a while (3-5 minutes). After that let the rice boil with two liters (hot water) water and 10-12 green chillies.
Note: You will use twice as much hot water as you would use rice. For example, 1 liter of hot water for 500 grams of rice.
Step 03
After about 15 minutes, open the lid of the pot and pour the cooked beef or goat meat into the rice while there is little water and you can add 4-5 potato bokhara along with peas, raisins, almonds.
Especially important at this stage is to turn down the heat on your stove. Keep heating the stove for a little while and after 5 minutes add the biryani and follow the next step.
Note: Be careful not to let the biryani settle on the bottom of the pot. This may distort the taste. So try to cook on low flame.
Step 04
At this stage your biryani is about to be cooked, lastly add a teaspoon of ghee and place the cooked biryani on the dum.
